The ability to store information and easily access it, has been one of the game-changing abilities of the iPhone/iTouch.  The biggest impact onboard of this technology has been in the galley.  New apps are being created daily that really help chefs step-up their game.  Here are a few more that we recommend.

  • Ratio: based on Michael Ruhlman book.  Has the formulas for 28 key ratios from baking to sauces and does the calculations for you.  Also includes explanations & how-tos.  Michael Ruhlman is one of our favorite cooking authors.  works off-line
  • Smart Chef: a substitution app to save your ass - no need to panic when you forget to provision the buttermilk for the boss’s favorite pancakes.  Use this handy app to find a recipe for substitution from items you have on hand. works off-line
  • Seafoood Watch: the top-rated seafood guide from the Monterey Bay Aquarium.  This app helps you make the wisest choice for the environment and seafood stock.  Includes replacement suggestions for species that are over-fished. Includes a sushi guide that uses both English & Japanese names. free & works off-line
  • Sushipedia: Great for eating out or making sushi onboard.  Covers both seafood and rolls.  Lovely photos.  Both English & Japanese names. free & works off-line
  • Locavore: U.S & U.K. seasonal guide for produce.  Based on your location it shows what is currently in season & how long the season will last - you can also see what will be in season in the future.  The app coonects to the website foodista.com for recipes linked to seasonal fruit and veg.  It will also locate farmer’s markets.  some functions work off-line
  • Harvest: Fruit and vegetable guide for how-to buy and store produce.  Includes photos.  Only uses American names for produce.  works off-line
